Fish Tacos with Corn Salsa

Ingredients

1 pack Sealord Classic Crumb Bites
1 cup
Canned or frozen corn kernels
2
Tomatoes. finely chopped
1/2 Small red onion, finely chopped
2 tbsp
Coriander, finely chopped
juice of 1 Lime
1 tbsp Olive oil
2 cups Shredded cabbage
8 Small soft tortillas, warmed
Chilli sauce to serve

 

Directions

Step 1 of 5

Heat the oven to 200°C.

 

Step 2 of 5

Place the Sealord Classic Crumb Hoki Bites on an oven tray and cook for 14 minutes, turning once.

 

Step 3 of 5

While they cook, prepare the corn. If using canned, drain well. If using frozen, boil in water for 2 minutes then cool under cold water and drain well.

 

Step 4 of 5

Place the corn in a bowl and mix with the tomatoes, red onion, coriander, lime and olive oil and season with salt.

 

Step 5 of 5

To serve, place some shredded cabbage on a warm tortilla, top with fish bites and salsa and add chilli sauce to taste.
